Leftover Mix-Up: Island Rice Recipe

I had about 1 1/2 cups of brown rice sitting in my fridge and a boneless, skinless chicken breast that had been cooked in the crock pot.

I looked in my cupboard searching for a new way to put chicken and rice together and here's what I did--measurements are approximate:

Pamm's Island Rice

1 1/2 cups cooked brown rice
1 cooked chicken breast, cut into bite-sized pieces
1 can tropical fruit salad, drained
2 tbs. lime juice
1 tbs. olive oil
salt & pepper to taste
1 tsp. onion powder
1 tsp. dried basil

Toss and chill.

It made enough for two meals for me. I ate it cold. It makes a delicious and easy grab-and-go meal.
