Sunshine Tacos

This is another recipe I found in an "Eat Smart" child care food program handout from an online friend.

The recipe is so simple and "freezable".  With only three ingredients, how easy is that?!


Sunshine Tacos

10 wheat tortillas
2 cups shredded cheese
10-12 eggs

Lay the tortillas out on a baking sheet and sprinkle a little cheese on each.  Put in a 200 degree oven just until the cheese melts.  (I put them in an oven that was still warm, but turned off, after I made something else in the oven, using the residual heat.  You could also melt the cheese one or two at a time in a microwave.)

While you are melting the cheese, scramble the eggs.


Spread a spoonful or two of scrambled eggs among all the tortillas.


Fold into a taco and enjoy!


Or what I did was fold into burritos, wrapped into meal-sized packages, and put them in the freezer.


They will make wonderful breakfast burritos when I serve breakfast for lunch to the toddlers.
